Description
Our anchovies are of highest quality and fished in the high Adriatic Sea, processed directly on site. They are put in salt for 8/10 months where the meat slowly ripens and takes on a brown red color and the characteristic flavor. Removed from the salt, the anchovies are then peeled and filleted with the utmost care in order to keep the organoleptic qualities of the fish intact, guaranteeing its taste and consistency.
