Storage conditions and methods of use
Store in a cool, dry place away from sources of light and heat. Quick and easy to prepare, preliminary soaking is unnecessary, just rinse them and cook them in cold unsalted water for about 20 minutes (7 minutes in a pressure cooker). A bay leaf, added during cooking, will enhance the taste and make them more digestible. Salt should be added only at the end of cooking so as not to harden the skins.
